My Mama's Famous No Bake Cookies!

Do you have a cookie that is your childhood staple? I have several, but one of them is my mom’s famous Chocolate No Bakes. I was always fascinated at the simplicity of not BAKING a cookie [okay truthfully, it still fascinates me?] and hers always turned out SO GOOD.

Except one time, when my dad made a batch. He put four teaspoons of cocoa in when it was supposed to be Tablespoons. We wondered what in the world happened and why they weren’t chocolatey and then he realized ooooohhhhhh, not nearly enough cocoa! [I love you, Dad!]

These cookies are the perfect blend of good texture, sweetness, and chocolate. Fun fact, I argued with my husband NUMEROUS times about how putting peanut butter in a Chocolate No Bake would NOT be good. And then he showed my mom’s recipe which low and behold, calls for 1/2 cup of peanut butter. (Remember, my MOM used to make these, not me. Sorry, Mom!)

So here’s watcha do, Y’all:

Get your ingredients.

4T Baking Cocoa
2 cups of Sugar
1/4 cup margarine or butter
1/2 cup of milk
3 cups of oatmeal
1/2 cups of peanut butter
1 teaspoon vanilla

Directions:

Boil the cocoa, sugar, butter and milk together for 1 minute. Take off heat and add the oatmeal, peanut butter, and vanilla. Stir quickly, and drop by large spoonfuls on waxed paper. Then cool completely.

Our kids were equally fascinated by this type of cookie and it was pretty adorable. “I want to taste the dough!” they said. I explained that this dough was different and at first, they protested, “No! I like the regular dough, normal dough!” and then they got a big spoonful of the delicious chocolate goodness :) They were completely sold!

Pierson is in a stage where he thinks it’s REALLY funny to not smile for pictures; or to make ME laugh instead of him smiling. And Reese is the most animated extroverted child I’ve ever met. But that’s beside the point. These kids are pretty wonderful and so is my husband, who really is the one who pretty much made these cookies….(Thanks, Babe.)

Announcement: The Beloved Women Collective!

For a couple of years the word ‘beloved’ has been on my heart. The word “be.loved” means
dearly loved, a much loved person.
In an interview once, a woman asked me, "What do you wish you could tell childhood Ashley?" It was a question that really stumped me. I felt flustered and nervous and like I could probably tell little kid Ashley a million different helpful things, but spilling out of my mouth was this:

"I would tell her to live loved."

In 2016 I launched a series called The Beloved Woman, where I featured women across the U.S who I felt embodied grace and talent, and who were empowering other women with their inspiration. While I would love to say that series has turned into something huge, I found pretty quickly that I didn’t have as much time as I wanted to photograph and interview women. There are so many women with incredible and important stories to tell, I hope that over the years I can get into a better rhythm or at least figure out how God wants to use me within that series.

Over the last several months or so, I have been trying to use Instagram as a tool for ministry (as well as a place to do business and earn income.) It is a gigantic platform with millions of users, so what better way to talk about the Gospel there. We who use it know that the algorithm is and can be very tricky; I think social media experts say that maybe 3% of our followers actually SEE our work. I decided that I didn’t really care about the algorithm anymore, that I just want to share what I am passionate about. I felt called to start asking people how I could pray for them, and before I knew it, my direct messages were overflowing with requests and notes of thanks from followers who appreciated the offer. After my most recent Instagram story telling viewers I would pray for them, I felt a giant nudge in my heart that perhaps this could turn into something bigger. I immediately called my sister in law, Bethany Renee, and spit out all my thoughts/ideas/questions. She’s been really great at helping me compile my cluttered notions into an action plan, and ultimately we decided that creating a Facebook Group for women in need was the current way to go.

I want to know you better, to encourage you, to wrap my arms around you, to challenge you to think deeper about yourselves; so that in turn, soon, YOU will feel the love. Dog Moms + Dog Dads: Reasons We Love Nature's Recipe Dog Food

One of my favorite memories of Humphrey (and by favorite, I mean, years later, now that we can laugh about it), is when he ate our ENTIRE Christmas ham. Remember in The Christmas Story where the Bumpus Hounds devour their Christmas turkey?! That legit happened to us. I was in the living room nursing our three-month-old, and my husband was upstairs with our oldest. I thought the house was just super quiet and peaceful when all of a sudden, I heard a crash. Humphrey had been able to steal bits of the ham quite tactfully off of the counter without tampering with the evidence; until suddenly the dish crashed the floor. I jumped up, and barely had to walk a few steps before he just came cowering to me. He KNEW what he did, oh yes, he knew. That and when I was in a pie baking phase for one of my New Year’s resolutions. I had worked so hard on a from-scratch made crust and delicious blueberry pie, and like a dummy, left it on the counter when we left for church. (Why?!!?) We came home and my pretty pie plate was on the kitchen floor and the PIE of course, no longer existed. I told my husband, “I need a minute,” and walked upstairs.

Oh sweet, Labrador retriever, you have solidified every single stereotype people assume about you, ha ha!! Truthfully though, Humphrey has been through thick and thin with us and our family. He never batted an eye when we brought both kids home from the hospital. He has helped us feel safe no matter where we’ve been. And he has also clearly eaten an abundance of food NOT intended for him ;)

Our Elsa Girl has been a gentle spirit. She is quiet and patient, and wherever we are, she is also. Since I was a little girl I dreamt of having my very own ‘Full House dog,’ and she’s even better than that. The kids have climbed on her, sat on her, ‘brushed’ her fur, and she never bats an eye.

We have been really fortunate that so far, both of them are extremely healthy. They have always been really active, and while Humphrey can’t really run per se anymore…he loves his walks around the neighborhood. And Elsa is still running on trails and swimming in ANY body of water she can find. Together, these two make the perfect pair, and we love them, a LOT.

For a long time, we have been using Nature’s Recipe® premium dog food. It used to be sold primarily at pet specialty stores, but I am thrilled that Walmart carries it—AND for a low price. It’s a double perk that we recently moved and there is a Walmart just a few miles away. There are several reasons my husband and I choose Nature’s Recipe for our pups:  

-They LOVE the ingredients, and who wouldn’t? Lamb, sweet potato, and pumpkin?! YES!
-It is completely grain free and easy to digest; which is especially great for them being older dogs
-The entire recipe is crafted with nutrient-dense carb sources, and there is no corn, wheat, soy, OR poultry-by-product meal!!
-Natural dog food with added vitamins, minerals, and nutrients

We are conscious about what we feed our kids, so why not be when it comes to taking care of our pets? If you are looking for a new food to feed your dogs, I highly recommend Nature’s Recipe dog food. There are so many options, and even wet food. Our dogs come to their food bowls wagging their tails, and how could they not?

Time for Cookies!!! Super Yummy Maple Chocolate Chunk

The kids have been asking me for a couple of weeks, "Can we bake cookies??" Last week I was in a super anxious and frusterated mood and I decided to whip through our Lazy Susan to see what ingredients we had. Why I choose to bake with two very small children when I am not in the greatest of moods is beyond me, however, I will admit that about half way through I started to cheer up and feel calm again. (Thanks, kiddos, for putting up with your mama!) 

I went to my Pinterest 'Sweets' board and found a recipe I had never made before: Ooey-Gooey Chewy Maple Chocolate Chip Cookies. I've never used maple syrup in cookies (have you??) but it is a genius idea! Most of the sweetness came from the syrup, as only 1/4 cup is required of granulated and brown sugar. 

If you're in the mood for a very SOFT cookie filled with chocolate chunk goodness, this is the cookie you should make. Here's what you need, my only adaption is that I didn't use the maple extract because we didn't have any:

  • 6 tablespoons salted butter, room temperature
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/4 cup pure maple syrup
  • 1 large egg, room temperature
  • 2 teaspoons maple extract or maple flavor
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup plus 5 tablespoons all-purpose flour
  • 1 cup dark chocolate, cut into large chunks

I followed Broma Bakery's instructions exactly, and I don't recommend swaying from them! She was spot ON about the ten minutes of bake time. Yes, they DO look way underdone, but after sitting on the baking sheets for ten more minutes after they're out, they are literally perfect. 

  1. Preheat oven to 350°F. Grease two cookie sheets and set aside.
  2. In a standing mixer with a paddle attachment, cream the butter, granulated sugar, brown sugar, and maple syrup for 2 minutes until light and fluffy.
  3. Add in egg, maple extract, vanilla extract, and salt, and beat for an additional minute. Pour in flour and turn the mixer to its lowest speed, working in the flour only until it incorporates.
  4. Remove from mixer and fold in chocolate chunks. Use a 2 ounce cookie scoop to scoop cookies onto prepared cookie sheets.
  5. Bake cookies for 10 minutes. Remove the cookies from the oven and allow them to sit on the baking sheet, untouched, for 10 minutes. They will continue to cook and crisp up around the edges during this time.
  6. Once the cookies have sat for 10 minutes, you can remove them from the cookie sheet and serve!
