The Best Layered Dip You Need this Summer

DSC_7470.jpg

Don’t you love a good 7-Layered Dip?! It’s SO easy to make and everyone loves it. I mean c’mon, layers of creamy and fresh ingredients spread into a 9x13 pan, how simple can a recipe get? Throw some tortilla chips on the side and you have perfect dippers to pair alongside it.

This dip has seven (obviously) layers to it and creating them was super quick and easy. Here’s what the layers are:

  • Refried beans

  • Sour cream (mixed with cream cheese and our newfound friend Dano’s Seasoning [found at Kroger just like the rest of this!])

  • Guacamole

  • Salsa (drained)

  • Cheese

  • Green onions

  • Olives or tomatoes

Jalapenos and cilantro are also great toppers for this Mexican 7 layer dip, you can simply get creative and have fun with this.

This dip was a hit in our household and I may or may not have taken a HUGE portion for lunch the next day and then had MORE the following night. This will be GREAT to take to family functions this summer, potlucks, holiday parties, you name it. All of our ingredients were found at our local Kroger, including the Dao’s Seasoning (which is SO good, Y’all!!)

Easy and Healthy Mediterranean Lamb Bowls

ashley glass blog

When you think of a summer dinner, what sounds GOOD? For me I tend to lean towards fresh, light, and usually on the healthier side. There is something about these HOT and humid Kentucky days that make my taste buds crave less calories.

We recently partnered with Kroger to show how they support our local brands, and while this blog post is NOT sponsored, it is thanks to them that we found and created this dish and I wanted to share! I haven’t eaten a lot of lamb in my lifetime, but that’s what we went with when working with Kroger, to help promote Freedom Run Farm. Let me tell you, this lamb was DELICIOUS!! We looked up recipe ideas for working with ground lamb and we were led to Fox and Briar’s blog. She introduced us to this INCREDIBLE Mediterranean Lamb Bowl and I had to share with YOU.

Ingredients for the Bowls:

To Make The Spiced Ground Lamb:
Heat a large sauté pan over medium heat and add the olive oil. When the oil is hot, add your onions and garlic.  Sauté all of this for five minutes, until starting to soften and then add the ground lamb.  Brown the lamb until cooked through. Add paprika, allspice, red pepper flakes, ginger, salt and pepper.  Mix until fully combined, cook for one or two minutes. Remove from heat and stir in fresh herbs. To assemble the bowls, layer the Turmeric Rice, top with some of the spiced lamb, tomatoes, cucumbers, hummus, and feta. Sprinkle it with fresh mint and parsley! (It’s DELICIOUS!)

I think Asa has made this almost every week since discovering this recipe. He put his own little touches on it, but overall this comes from Fox and Briar. Make this for your next date night, family night, or when you have some friends over. The vibrant Turmeric Rice with the veggies and cheese and pita is SUCH a fun and refreshing meal. We bought some hummus and spinach dip to use on the pita’s, and every bite was filled with so much YUM! Let me know if you make it, I want to hear your spin on it and how/if you enjoyed it as much as we do.

Happy Summer dining, Friends! Stay safe stay well!

An Eggscellent Easter Spread for Your Sunday Meal!

DSC_6520.jpg

Cheesiest caption ever—but seriously. As you all know, my husband is the Chef in our family, and he did NOT disappoint with our recent [early] Easter spread. This year we decided we wanted to host some friends and get together, so that’s what we did! My number one request for basically every formal (or informal, who am I kidding) meal my husband makes, is that he makes his amazing Deviled Eggs. I posted a story on Instagram about it and asked if anyone else was as obsessed with them as I am, and did you know that in Australia, no one really eats them!? This sweet gal said, “No, but I’ve also never really had a deviled egg before, they aren’t popular here.” I told her that she desperately needed to change that, OR she should fly to Kentucky so my husband can prepare some for her the right way. Easy, right? ;)

My mother-in-law actually took the kids to a movie for some of the afternoon, and so it was REALLY nice to have a meal in our formal dining room fellowshipping with some of our favorite people, without them interrupting. I love them to death, but let’s face it, sometimes you can’t get much catching up when you have a busy five and six year old present. (They did show up towards the end though, and they were equally as happy to see our friends and eat their Dad’s delicious food.)

While we tend to have too much food no matter the holiday (no complaints there!) we like to keep things pretty simple. For our Friends Easter, we enjoyed a delicious ham, honey glazed carrots, green beans, baguettes, deviled eggs, and another favorite of mine…mashed potatoes! We also indulged in the desserts, and went with a yummy Kroger Carrot Cake, and cute Easter themed sugar cookies. YUM!

If you’re looking for some Easter inspiration, I hope this helps! If you need to pick my husband’s brain for recipe ideas, or any further details, don’t hesitate to e-mail me. He really is an amazing cook and I am SO thankful for him!!

Here are a couple of the items Asa (my husband) whipped up. You’ll have to tell me if you re-created any of these ideas or how this post inspired YOUR Easter planning! Happy Holiday, sweet friends!

Everything found in this blog post was purchased at our local Kroger, but it was not sponsored by them. I just wanted to show you what we did for this meal and thought it may be helpful to know where we got everything, decorations included!

Our Journey through Potty Training [with Comforts for Baby]

DSC_2339.jpg

Potty training is a real hoot. Truly, it's a gem of parenthood.  There are so many different ways to teach little people how to pee in the potty. There is the “wait and pee” and “potty  planner” or the “eyes on the prize” or the “Panty Raid”. Let’s be honest, cutesy (and kind of disturbing) names don’t make the ensuing mess and drama any less real. Guys, there is gonna be pee. There is gonna be poop. There is gonna be a lot of mop buckets. But there is also help and hope on this journey.

My son might be one of the most natural rule followers I know. He is meticulous with cleaning his room, excellent at school, always colors in the lines, just aims to be awesome at whatever he sets out todo. When he was just 18 months old, he hopped out of the tub, ran to his Elmo potty and never looked back. There were some issues with him building confidence to go, shall we say, number 2. But we ditched wearing diapers, and switched to underwear without thinking twice.

My daughter might be one of the most creative and free spirited children I know. She intentionally wears mismatched shoes on the wrong feet. She colors a rainbow on her page with no concern for the lines. She dances like no one is watching, and laughs with her whole body. When she was fifteen months old she hopped out of the tub and pooped on the potty--and then didn't do that again for a LONG TIME.

Reese was more stubborn than her brother about potty training. Not that wouldn’t use the potty like we were teaching, but at times it was like she couldn’t be bothered to stop her game, her lunch, her…creativity to go to the bathroom. When she turned eighteen months (the age her brother was when he mastered this endeavor), transitioning her straight out of diapers to underwear just wasn’t what she needed. The kindest solution that we learned with Reese, that I'm very glad we stuck to, was simply this: TIME.

Sounds simple, doesn't it? But really, I stopped stressing out, I stopped bribing with sticker charts, I stopped giving myself straight anxiety at the thought of accidents because I just knew. I knew that Reese was different, and that as independent as she longed to be, that potty training would be OKAY. It's amazing what you remember in your child's lifetime and the things that you don't. I have friends ask me what age we started solids and with my son, I remember that he was six months old exactly. But with her, I have no idea?! I do however, remember potty training with BOTH of them.

DSC_2328.jpg

Pretty shortly after Reese turned two, she announced that she wanted to be done with diapers. Instead of underwear [which we immediately went to with our son], we let her pick out Pull-Ups. She has always been a girly girl, and instantly drawn to everything princess related. Thanks to Comforts™ Diapers we found the happy medium, and were able to purchase their Princess Themed training pants (which she LOVED). Within several weeks of wearing training pants, Reese was able to transition to little girl underwear during the day; however, at nap and bedtime, she still slept in a pull-up. The Comforts for Toddler Training Pants that we use, have really made potty training engaging for Reese. She loves the princess characters, and the product itself is thin and comfortable. They are simple for her to pull up and down, and the flowers fade when wet, letting me know if she had an accident.

DSC_2335.jpg

To go along with the Comforts Pull-Ups that she wears, we mostly have used their Sensitive wipes. I'm not sure at what point we'll stop purchasing wipes, I like to always keep a package in the car for meals on the go and for when and if accidents happen! These ones in particular smell very refreshing, are gentle on my kids' skin, and they serve many purposes beyond cleaning up toddler bottoms-- like teaching Reese how to care for her baby dolls for instance ;)

Now our big 4-year old only relies on a pull-up only when she sleeps at night, and they're easy enough for her to pull down, put herself on the potty, and go BACK to bed. (Motherhood goals, right?!) Thank you, Comforts for Baby brand for helping us through this process and for all my readers, these products are exclusively at Kroger® Company family of stores. You can check them out and read more about Comforts on their Facebook page here.
